To be honest I'd just double double double check that it's not running very lean or too far advanced at tick-over but correct at full chat. That would give you a pretty good reason for the engine temp rising in traffic/low RPM.
I did mine a few years ago using Superflex, you just use the 2 bush halves and the centre sleeve, no seals or caps.

I know it's a million to one shot, but does anyone have a NS (left) front wing panel with the area marked in red intact/good condition?
The muck/damp has gathered on top of the plastic "eyebrow" and rotted through from the back so I'll need to repair the one on Binny.

I went to pick a diff up I bought on eBay from a guy in the middle of nowhere (on a farm north of Harrogate) and spotted a Spitfire4 down the side of a barn. I didn't get chance to look at it, but he says it will be offered for sale shortly, so I said I'd ask around and see if anyone was interested so he could try and avoid the eBay fees.

Problems with fuel delivery - I've had 2 serious issues both caused by the same type of problem. Dried out/shrunk seals. I had it once in the "lid" of the mechanical fuel pump on the 1850 Dolomite and once with the inline filter on the Spitfire.
The Spitfire simply wouldn't start as the shrinkage was so bad the pump just pulled air. With the Dolomite it manifested itself as fuel starvation at high load, clearly the pump was able to push some fuel, just not enough as it drew more and more air at higher RPM/Load.
I actually looked at getting white letter decals made in the Smiths type face and then I could use a scrap gauge face, bare metal and repaint and then apply the decals. But I thought spending ££££ just to make the type-face match was getting silly!
My OCD couldn't cope with 3 uppy gauges and 1 downy gauge.... I spent hours and hours and hours on eBay etc until I found a pressure gauge to "match" (Still not 100% happy as it has slightly different type-face)
Fingers crossed it's just a bit tight with the rebuild and just needs to bed in.
But if I were a pessimist I'd check rockers/valve gear make sure nothing is too tight and binding up when warm.
Were the ring gaps checked before fitting? Worst case scenario - rings are too long/insufficient gaps and expansion is causing them to grab the bore.
(My money is on #1 though... just needs to bed in)
It could be that I'm a numpty. The MOT specific checker is working as expected, the more generic "dvla vehicle check" https://vehicleenquiry.service.gov.uk/ shows no MOT data!
